The best noodle soups in the world
Best noodle soups in the world
I am a Filipino who grew up eating noodle soup or just soup. Noodles and its derivative, the soup is part of Asian meal. My mother always cook it, everyday and I always anticipate it, however, I miss the way my mother cooks my favorite chicken noodle soup when I came to the city to study. I stayed in the dormitory, was fifteen by then. Nobody would cook for me during those times and we are not allowed to cook at that place. I would buy instant noodle soup, stock them, and eat once in the morning when I wake up, specially when I don’t have coffee to perk me up. Well, I can also eat them during the day, and it served as my meal.
During weekends, I will visit some relatives and eat at their house, still, I will look for noodles. Noodle soups are good specially during cold weathers, so I eat two noodle soups (two times) during the cold season. It is not so cold anyway in a tropical country, but I guess I am just too thin growing up, so I need some kind of warm food, to keep me warm of course. It has been my favorite food until now. I prefer cooked noodles unlike the packaged one available anywhere in markets and stores. The instant noodles soup available at the markets are little bit salty and have many preservatives on it. After eating noodles soup, it is good to follow it up with water, warm so that your teeth will not be affected by the sudden change of temperature from warm to cold.
Every year during my birthday too, I will cook something with noodles on it. It is believed that it is a good luck to have a long life.
During my travel abroad, I always look for noodle soups or just soup, I discovered it is not available in all parts of the world, and I had to contend with soups without noodles, that will do for me. But I can say i am a bit blessed because there are numerous Asian restaurants here in the US. I like rice noodles, yakisoba (buckwheat), or ramen noodles, anything which is noodles anyway.
Best noodle soup in the world is mami soup
I love Filipino mami soup a lot because I grew up with it. It is composed of rice noodles soup (Mami) with onion, chicken of course, garlic, cabbage and carrots. You can also put boiled eggs on it, whew, yummy.

I wrote another hub about cooking techniques of noodles here --
Cooking Techniques in Noodle Soup
When I first tasted Tom yum kung soup in a Thai restaurant in my country, I fell in love with it, but the one I tasted in Bangkok Thailand is the best. Food is obviously best when you eat it in their place of origin, (but you cant just simply go to a place just to eat, hmmm, I wish I can be as rich to travel and just eat, any alternative for me is good enough though). In Thailand, they always served noodles at the end of the meal or towards the middle, and noodle soups have some kind of --sweet, bitter, sour, salty and hot--so that the palate is always adequately stimulated. Tom Yum Kung is a classic spicy Thai soup that can be eaten as a complete meal, or as an appetizer. It is my favorite soup, good for colds and immune system. Usually it has fish sauce on it, yummy.
Another favorite of mine is Pho Vietnamese beef noodle soup, it is yummy with the condiments, Cock Sauce (Sriracha hot chili sauce) and Hoisin Sauce. It goes with some kind of pho vegetables and herbs (bean sprouts, limes, cilantro or basil) .You can choose whatever veggies you will put into the noodles. Its funny but my other son calls the veggies on it weeds, he asked me once, mommy are they weeds? This noodle soup is awesome too.
I have also cravings for Korean noodles soup, sollongtang . It is a rice beef noodle soup and it is good as a meal already. It consists of sesame oil and seeds, scallions and you can also put salt and pepper on it, sometimes if you like you can put rice on it too.
Japanese miso soup is also very nice. A miso is a seasoning with a thick paste made from fermented soybeans and barley or rice malt; used in Japanese cooking to make soups or sauces. You can mix broccoli, carrots and noddles to make a noodles miso soup, yummy.
There are lots of other noodles soup variations and you can try them if you want, specially during cold seasons. The once I mentioned here are some of the worlds best noodle soup.
